Greens

Ingredients

  • Greens (collards, mustards, turnips)

  • Salt pork

  • Crushed red pepper to taste

  • Dash of sugar

  • Salt (optional; to taste)

Make it

  1. If salt pork has a layer of salt on it, rinse it off. It is always easier to add more salt if needed.

  2. In large pot, on medium heat, boil salt pork until tender.

  3. Thoroughly wash greens and chop.

  4. Add greens, pepper and sugar.

  5. Cover and cook over medium to low heat until greens are tender, approximately one hour. Stir every 10-15 minutes.

  6. Add water as needed.

  7. Add additional seasoning as desired.
