Peach Cobbler
Peace Cobbler with Vanilla Bean Ice Cream
Ingredients
Peach Filling
4 cups fresh or frozen peaches
½ cup sugar
¼ cup brown sugar
4 tbsp unsalted butter
1 tsp cinnamon
1 tsp nutmeg
1 tsp allspice
1 tbsp vanilla extract
Juice of ½ lemon
Crust Topping
1 cup flour
¼ cup sugar
1 tsp baking powder
¼ tsp salt
¼ cup water
1 tbsp soften butter
Cinnamon and sugar to sprinkle
Make it
In medium sauce pan, combine peaches, sugars, spices, lemon and vanilla.
Cook on medium to low heat for about 15-20 minutes until sugar dissolves and peaches cook.
Preheat oven 400 degrees when peaches are nearly done.
In a bowl, mix sugar, flour, baking powder, salt, and water.
Pour peach mixture in 8x8 inch baking pan. Mix in butter. Pour crust mixture over peaches.
The crust may sink into the juices, but it will rise as it cooks. Spread 1 tablespoon of butter on top. Sprinkle with sugar and cinnamon.
Bake until crust is golden brown. About 30 minutes.
